Having a brunch with friends/family and you would like to include a nice typical breakfast menu item but want to make sure it is not do typical? Try egg muffins. Scrambled or not, they make for a wonderful addition to a brunch menu. I stumbled across this recipe while making a quick and seamless breakfast. Sausage, bacon and eggs right? Well, how about sausage, bacon and eggs made a little different, but not so different people suddenly have a change of meal plans. A muffin pan becomes the small frying pan and the rest is up to your creative and chef ability. I used two different recipes just to see which one would fare better. A single cracked egg in one muffin container with a sprinkle of salt and pepper followed by a sprinkling of shredded cheese to cover the top. Another bowl contained two cracked eggs, pepper, salt and shredded cheddar cheese mixed together. The mixture was poured into two muffin containers. The muffin container was placed in a preheated oven and baked until the eggs formed a small pouf which signaled the baking was complete. A baking spatula was used to remove them from the muffin pan and breakfast was served. I found a more thorough recipe to share so this can be a great breakfast idea for the family or for hosting a brunch.
